Sweet Potato Pumpkin Pie

Since it's Thanksgiving tomorrow, i made some sweet potato pumpkin pies.. They turned out to be really delicious so i want to share it with you guys..Here's the recipe:


Pastry:
1 cup all-purpose flour
2 tbsp superfine sugar
1/4 tsp salt
4 oz cold unsalted butter
2 tbsp ice water

Filling:
2 eggs
1 cup brown sugar
1/2 tsp salt
1/2 cup of milk
1 cup of cooked pumpkin
1 cup of cooked sweet potato
1 tsp pumpkin pie spice (allspice + cinnamon)

Method:
1. To make the pastry, rub butter, sugar and salt into the sifted flour till it resembles bread
crumbs. Mix in cold water to form dough. Rest for 1 hour in refrigerator.
2. Preheat oven to 425 °F (200°C).
3. For the filling, beat the eggs and brown sugar together. Then, add in all the other ingredients
and beat until combined.
4. Press a piece of pastry dough down into a pie pan or muffin pan and press down along the
bottom and all sides. Fill the shell up to the edges with pumpkin and sweet potato filling.
5. Bake at 425°F for 10 minutes, then lower the temperature to 350°F and bake until golden
brown (about 30 minutes).
